Winter slaw with pear vinaigrette
INGREDIENTS
- 300g red cabbage
- 125g radish
- 150g celery
- 300g carrots
- 150g celeriac
- 1 tbsp rice vinegar
- Juice of 1 orange
- 1 tbsp whole grain Dijon mustard
- 1 tbp canola oil
- 2 tbsp olive oil
- 2 pears
- Large pinch salt
- Large pinch pepper
METHOD
To make the vinaigrette
Place the vinegar and orange juice in a bowl. Add the mustard and whisk well. Whisk in the oils.
Wash and core the pears and chop into large blocks. Purée the of the vinaigrette. Blend until a smooth and creamy sauce forms.
Refrigerate until needed, making sure to cover dressing with plastic wrap.
To make the salad
Shred the red cabbage finely. Wash and trim the radishes and grate fine. Add to the cabbage.
Wash celery sticks, and cut into thin slices at an angle. Add to the cabbage mix and combine well. Peel the carrots. Cut the carrots into long thin strips using a julienne cutter. Mix carrots with the rest of the ingredients.
Peel and cut the celeriac with a julienne cutter into thin strips and combine with the rest of the ingredients.
When ready to serve, dress with the pear vinaigrette.
