Steamed french beans, peas & sugar snaps with germolata
INGREDIENTS
- 500g French beans (finer beans are better)
- 250g peas
- 250g sugar snaps
- 1 garlic clove
- 10 sprigs parsley
- 5ml sea salt
- Pinch black pepper
- 1 lemon, zested
- 5ml olive oil
METHOD
For the gremolata: finely chop the garlic, lemon zest and parsley. Add the olive oil and combine well. Set aside until ready to use.
Top and tail the French beans. If they are thick you can halve them, if not, leave whole. Top and tail the sugar snaps.
Steam the beans and sugar snaps until al dente.
Steam the peas if using fresh. If using frozen peas briefly boil them for 3 to 5 minutes, then strain and combine with beans and sugar snaps.
Season with salt and pepper and toss the gremolata through just before serving.
Serve hot as a vegetable side dish.
