Corn, red pepper & red onion salsa
INGREDIENTS
- 3 ears corn
- 2 red peppers
- 1 red onion, finely chopped
- 10 sprigs coriander, finely chopped
- 20ml olive oil
- Pinch sea salt
- Pinch black pepper
METHOD
Steam the corn for 5 minutes and slice the kernels off the cob.
Cut the peppers into squares the size of the corn. Combine the corn, peppers and red onion.
Add the olive oil, coriander and seasoning.
Mix well and refrigerate.
Serve as an accompaniment to the Cajun sirloin.
Serves: 8-10, Preparation time: 20min, Cooking time: 5-10min
