Cajun-spiced sirloin

INGREDIENTS
  • 1.8kg whole sirloin
  • 1 tsp paprika
  • ½ tsp fennel seeds
  • 1 tsp ground cumin
  • ½ tsp mustard powder
  • ½ tsp cayenne pepper
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried sage
  • ½ onion, roughly chopped
  • ½ tsp salt
  • 1 garlic clove, roughly chopped
  • 10ml olive oil

METHOD

Remove most of the fat layer from the sirloin as well as the sinew under the fat.

Place the sirloin on a tray and pat dry.

Combine all the dry herbs and spices in a bowl.

Crush the garlic and onion with the olive oil in a mortar and add to the dry ingredients.

Rub the sirloin well with the marinade and leave to marinate for at least 1 hour.

Preheat the oven to 200°C.

Remove sirloin from the tray and brush off excess marinade.

Heat a cast iron grill pan and brown the sirloin on all sides.

Place the sirloin in the oven and cook for 15 to 20 minutes. Remove from the oven and allow to rest.

Carve thinly and serve with corn and red pepper salsa.
