Beef koftas with saffron yoghurt dipping sauce
INGREDIENTS
- 500g beef mince, lean
- 2 garlic cloves, chopped
- 1 tsp ginger, freshly grated
- 1 onions, finely chopped
- 2 tbsp parsley, chopped
- 1 tbsp mint, chopped
- 1 tsp cumin, ground
- 1 tbsp coriander leaves, chopped
- 2 tsp cinnamon, ground
- Large pinch black pepper
- Large pinch salt
- 1 tbsp canola oil
- 1 cup low fat plain yoghurt
- 1tsp honey
- Pinch saffron
METHOD
Preheat the oven to 200°C.
Place the onion, garlic, ginger, ground cinnamon, ground cumin, salt and pepper in a food processor and blend until it resembles a chunky paste.
Place the beef mince in a bowl and add the onion spice paste. Add the chopped herbs to the mixture and check the seasoning.
Shape the mince into 30g balls and shape each into an oval and set aside.
Soak bamboo skewers in cold water for at least 15 minutes before inserting into the oval beef koftas.
Place the yoghurt in a bowl and add the honey and mix well.
Place saffron in a cup and add 1 tbsp boiling water.
Leave to steep before adding to the yoghurt. Mix well and keep chilled until ready to serve.
Place the koftas on a baking tray greased with the oil, and bake until golden, turning after about 7 minutes.
Serve with the saffron yoghurt and garnish with coriander leaves.
